marinate chicken with pepper and salt, then coat with a layer of potato starch mixed with water. wrap chicken in aluminium foil and heat in a pan, adding water to the pan. chicken will come out steamed and its oil will remain in the foil. use the oil for the ketchup sauce later for the rice.
